Summer salad with chickpeas

400 grams boiled and cold chickpeas

½ kg cherry tomatoes

Baby spinach leaves

Baby rocket leaves

1 carrot shredded

1 red bell pepper in slices

2-3 soup spoons pumpkin seeds


For the dressing:

200 grams mayonnaise

40 grams Dijon mustard

Juice from 1 lime

Zest from 1 lime

Salt and pepper



Combine all the ingredients for the salad and share in deep salad bowls.

Mixed well all the ingredients for dressing.

Dressed the salad or serve the dressing separate.
