- 4 medium sized cod fi llets (Wellgoods)
- 1 cup fl our
- 1 tablespoon sesame seeds
- 1 small coff ee cup beer
- 1 clove garlic mashed
- Vegetable oil for frying
- Mixed greens for salad
- 12 cherry tomatoes halved
- 1 small coff ee cup olive oil
- 4 teaspoons balsamic vinegar
- Salt and pepper to taste
Method of Preparation
• Make the batter using the fl our, beer, sesame seeds, garlic, salt and
pepper
• Cut the cod fi llets into thick slices and dip in the batter
• Heat the vegetable oil and fry the cod until golden brown
• In a bowl mix the salad greens with the olive oil and balsamic vinegar
• Portion the salad into 4 servings and add cherry tomatoes
• Serve the salad with the fi sh still warm
