- 16 large mussels (Wellgoods) still in their shells
- 4 tablespoons olive oil
- Juice of ½ lemon
- 1 tablespoon fresh dill fi nely chopped
- 1 tablespoon breadcrumbs
- 4 cherry tomatoes quartered
- 2 olives quartered
- 1 tablespoon grated halloumi cheese
- Salt and pepper to taste
Method:
- Combine the olive oil, lemon juice, dill and pour half of this mixture over the mussels
- Sprinkle the breadcrumbs and the cheese over the mussels and cook in a hot oven (200°C) for 5-7 minutes or until mussels turn a golden colour
- Decorate the mussels with the quartered tomatoes and olives and pour the other half of the olive oil mixture on top
