Fillet of Halibut with an orange crust and sautéed vegetables

4 halibut fillets

1 egg white

1 tsp orange zest dried and bended into a powder

3 Tbl spoons dried bread crumbs

½ cup white wine

Salt and pepper

For the vegetables

1 carrot peeled and cubed

½ cup of mixed red, yellow and green pepper cubes

4 slices of leek (rings)

1 small aubergine cubed

3 button mushrooms sliced in quarters

2 Tbl spoons olive oil

Salt and pepper


Season the halibut fillets and coat in egg white.

Mix the orange zest and bread crumbs and coat the fillets.

Place the fillets on a roasting tray add the olive oil and white wine , and cook in a preheated oven for 20 minutes at 180c.

In a pan lightly sauté the vegetables till tender but still firm.

Then serve the fillet on the sauté vegetables.
