Easter Kokoretsi


2 lamb plucks
extra offal’s
2 lamb cowl fat
2 kg lamb bowels
lemon juice from 2 lemons
Little chopped garlic (if you like it)


Start to clean and wash first the bowels. Leave the water to pass from inside them until you see that are absolutely clean. After that soak in the lemon juice to get white color.

Cut offal’s in large pieces and leaves them to drain. Marinate for 1 hour with oregano, pepper and garlic and then pass on the spit. try not to leave space between the pieces.

Care fully covers with cowl fat and last with bowels.

Cover the spit with silver foil and start cooking on top of charcoals. After little remove the foil, and slowly cook until golden brown. Leave to cook but do not dry.
