1 large turkey fillet (Wellgoods)
4 tablespoons olive oil
1 tablespoon butter
1 onion finely chopped
2 cloves garlic finely chopped
3 cups sliced mushrooms
½ small coffee cup cognac
1 small coffee cup dry white wine
1 cup chicken stock
2 cups fresh cream
1 teaspoon fi nely chopped leeks
½ green pepper and ½ red pepper cut into small cubes
Salt and pepper to taste
Warm vegetables of your choice

Method:
• Cut the turkey fillet into small pieces (resembling slithers) and sauté in a pan with the heated olive oil and butter
• Add the onion, garlic and mushrooms and cook until soft and supple
• Add the cognac to this (it will flare up in flames) and then put out the flames with the wine. Simmer this mixture for an extra 1-2 minutes
• Add the stock, the cream, the leek and the peppers and continue to simmer for another 5-6 minutes
• Add salt and pepper and serve on top of a plate of fresh warm vegetables
