8 whole calamari (Wellgoods)
cleaned through
4 tablespoons bulgur wheat
1 onion fi nely chopped
1 clove garlic fi nely chopped
1 red pepper fi nely chopped
2 tomatoes fi nely chopped or grated
1 tablespoon dill fi nely chopped
A small bunch of spinach boiled and
fi nely chopped
½ cup tomato juice
1 cup white wine
5-6 tablespoons olive oil
Salt and pepper to taste

Method:
• Combine together the onion, garlic, bulgur wheat, tomato, dill, spinach, ½ the tomato juice, salt and pepper
• Stuff the calamari with this mixture and place in a baking dish
• Pour over the olive oil, wine and the rest of the tomato juice and cook in a preheated oven at 180°C for about 15 minutes
• Remove from the oven, cut in slices and serve
