Prawns ‘Saganaki’

16 medium sized prawns (Wellgoods) without the shell and with heads still intact
1 small coffee cup olive oil
½ onion finely chopped
1 clove garlic finely chopped
2 ripe tomatoes finely chopped
1 tablespoon tomato paste
4 tablespoons ouzo
4 tablespoons dry white wine
1 teaspoon finely chopped parsley
1 tablespoon dry oregano
1 cup crumbled feta cheese

 

Method:

• Add the oil to the pan and sauté the prawns until golden
• Add the onion and garlic to this and allow them to soften and brown
• Pour in the ouzo (this will flare up) and wine (this will reduce the flames)
• Add the tomato paste, chopped tomatoes, herbs, salt and pepper
• Place the prawns in equal portions in clay pots, add the crumpled feta cheese evenly on top of each pot and cook in preheated oven at 180°C for 6-8 minutes
• Serve with salad of your choosing
