Ingredients for filling:
1 kg lamb meat with out fat or bones
1 kg mizithra or anari cheese
3 soup spoons staka (traditional Greta fat from milk product)
3 soup spoons butter
salt, pepper, oregano
1 lemon
Ingredients for the dough:
1 kg hard flour
30 grams yeast
1 glass milk
2 eggs
little stock from the meat
1soup spoon butter
white sesame seeds
salt
Method:
cut the meat in very small cubes, marinate with salt, pepper, oregano and lemon juice and leave in drainer for one hour.
Prepare the dough:
Dissolve the yeast in warm milk, add the flour and leave the dough to rest. After that add all the rest of ingredients and knead very well.
Open the dough in 2 thin sheets.
Brush the pan with some butter and set the first sheet in pan base. Lay down the 1/3 from the cheese and topped with half of the meat. Continue again the same. Last add the butter and staka.
Cover carefully with the second sheet, close all the edges, brush with egg, dust with sesame and finally cook in pre heated oven on 180 degrees for 2 hours.
