For the fruits
4 small figs
1 peach
8 physalis (caped gooseberries)
1 bunch of grapes
2 apricots
½ a pomegranate
8 blackberries
8 strawberries
4 bunches redcurrants
For the wine
2 cups sweet red wine
Peel from half an orange
3-4 cloves
1 stick cinnamon
2 tbsp sugar
For the yoghurt-cheese
3 tbsp yoghurt
3 tbsp fresh cream
3 tbsp cream cheese
Method
Prepare the wine:
Put the wine and the rest of its ingredients into a small pan. Boil for 5 minutes and remove from the heat. Strain and put it in the fridge to cool for 1-2 hours.
Prepare the yoghurt-cheese:
Mix together all the ingredients for the yoghurt-cheese and freeze it for 1-2 hours.
For the serving:
Peel all the fruits and chop them in shapes you prefer. Divide the cold wine into 4 wide tall glasses, place the yoghurt cheese and on top the fruits. Garnish with the tips of fresh basil.
Chef’s tips
For easier cleaning leave the blueberries in cold water with ice cubes for 5 minutes.
