Turkey Breast with ‘Kolokasi’

2 turkey breast fi llets (Wellgoods)
4 tablespoons olive oil
2 sprig oregano
2 sprig thyme
1 cup sweet red wine
2 -3 cups cubed kolokasi
1 cup chicken stock
Juice of ½ a lemon
8 steamed or boiled asparagus stalks
Salt and pepper to taste

Method:

• Heat the oil in a pan and sauté the turkey fillets along with the herbs
• Add the sweet wine and then place the whole contents of the pan in a baking dish
• Cover the dish with aluminium foil and cook in the oven for 20 minutes at 180°C
• In a clean pan sauté the kolokasi in a little oil and then pour in the red dry wine and stock. Bring to a boil and then simmer until the kolokasi is soft. Add salt and pepper and the lemon juice
• As soon as the turkey fillets are cooked cut them into even slices and serve them with the kolokasi. Drizzle some of the kolokasi sauce on top and accompany with the asparagus
