Spinach Pie

Ingredients for filling:
1 kilo wild greens
1/2 kilo spinach
1 bunch chopped parsley
1 bunch chopped mint
1  chopped fennel
1 bunch chopped spring onions
1 chopped onion
6 soup spoons olive oil
1 tea spoon sugar
salt and pepper to taste

Ingredients for dough:
1/2 kg hard flour

1/2 tea cup olive oil
1/2 tea spoon salt
1 tea cup red wine
1 coffee cup warm water
butter for the pan
1 egg white

Method:

wash very well all the greens and spinach. Drain them and cut in large pieces. Mixed in a bowl all the greens with the chopped onions. Sauté them in pan with some olive oil and add the sugar, salt and pepper.

Prepare the dough:

In a bowl pure the water, wine, oil with flour and mix well. Share the dough in 2 and open in thin sheet. Brush the roasting pan with some butter and set the first pastry sheet. Filled with greens and topped with the second sheet. Brush with egg yolk. Cook it in pre heated oven for 50-60 minutes on 180 decrees. You can cut the pita in squares before cook it.
