1 kg octopus (Wellgoods)
2 tablespoons red wine vinegar
2 cups black eyed beans boiled
1 bunch fresh collard greens
2 tablespoons olive oil
Juice of 2 oranges
2 tablespoons honey
½ red chilli pepper
Fresh thyme
Salt and Pepper to taste

Method:
• Boil the octopus with the vinegar until it softens up
• Drain the octopus and cut each tentacle from the body of the octopus
• Lightly wilt the collards in a pan with a little olive oil. Add the boiled black eyed beans and add salt and pepper to taste
• Place the octopus tentacles in a clean pan, add a few drops of olive oil and thyme and lightly sauté for a few minutes
• Pour the honey, orange juice, chilli pepper over the octopus and allow to boil until the sauce starts to thicken up
• Serve the octopus over the beans and add honey/chilli sauce on top
