Prawn salad with pomegranate and walnut

Freshly cut salad leaves

16 prawns de-shelled with head still on

4 Tbl spoons walnuts (crushed)

4 Tbl spoons pomegranate

Virgin olive oil

White balsamic

Salt and Pepper



Season the prawns with salt and pepper then drizzle a little olive oil and place in a preheated oven at 180c for 6-8 minutes.

Mix the salad leaves with olive oil and balsamic season with salt and pepper and separate into your serving dishes.

Sprinkle with walnuts and pomegranate over the top and then finally remove your prawns from the oven and place them on-top of each salad and serve.
