Soutzioukos is one of Cyprus most significant traditional sweets. Its production slowly began to fade out through the years, therefore, it is considered to be one of the most popular and precious product which usually people sell it on Christian names celebrations, out of the churches.
Soutzioukos is a thick pure product with great nutritional value, made with a mixture of white grape juice known as “xynisteri”, whole wheat flour (optional) or farina and rosewater.
When the mixture is cooked, strings of almonds or walnuts (like a necklace) are dipped into it. This dipping procedure is repeated for 5-6 days once every day.
Leftovers of this mixture that is not able to dip the nuts lace can be used for making the “kiofterka”. After that this products become hard and is not any more pure, cut in square pieces and left them to be try.
Soutzioukos and Kiofterka traditionally served accompaniment with coffee, tea or any drinks.
You can store these products in a vacuum package or in a cool and dark place (Tziellari) place that, years before used to store many different ingredients, breads and traditional drinks.
