To prevent egg shells from cracking whilst boiling, add a pinch of salt to the water.

Making your own mayonnaise is easy. The trick is not to add your oil too fast because, if you do, the egg yolk can’t absorb it and the mixture will split. If this happens, don’t throw the mixture out. Start again with a couple of egg yolks. Then, instead of adding oil add your split mixture.

If you have undercooked a boiled egg, just pop the top back on and wrap the egg in cling film. Place gently back into the pan and finish of the cooking.

If you have trouble peeling hard-boiled eggs, crack the shells and soak them in cold water for a minute or two, then the shells will split off easily

For the perfect boiled egg, cover eggs with cold water and a pinch of salt. Bring the water to a full boil. Remove the pan from the heat and cover. Let the eggs sit for 8-9 minutes. Drain the water and place the eggs in ice water to cool to stop the cooking process.

When you are going to beat egg whites, let the eggs sit at room temperature for 30 minutes before using them. The egg whites will beat to a greater volume.
