Trout with Almonds

4 trout fillets (Wellgoods) degutted and cleaned
4 tablespoons olive oil
4 tablespoons butter
4 tablespoons lemon juice
4 tablespoons ground almonds (peeled)
5-6 tablespoons flour
Warm vegetables of your choice


• Heat the butter and olive oil in a large frying pan
• Coat the fish in the flour and lightly fry
• When the fish is cooked through remove from heat and sprinkle with lemon juice and the ground almonds
• Serve the fish with a variety of vegetables of your choice and pour over a little of the butter/olive oil mixture
• Accompany with fresh lemon slices
