Potato, Parmesan and greens salad

Assorted green leaves (spinach, rocket, lettuce harts)

2-3 medium boiled and cold potatoes unpeeled

2 small radishes in slices

1 red onion in slices

250 grams shredded Parmesan cheese

Salt and pepper

 

For the dressing:

1-cup mayonnaise

2-3 blended sun dried tomatoes

1 teaspoon chopped chives

 

Method:

After you wash and drain salad leaves, cut them by hand.

Cut potatoes in large cubes.

In a large salad bowl combine all the salads ingredients.

Mixed well the dressing ingredients and mixed together with salad.
